Ingredients:
For cake
A:
5 egg yolks
1 tsp vanilla essence
1/2 cup caster sugar
1/2 tsp salt
1/2 cup water
1/2 cup oil
175g high ratio flour
2 tsps baking powder
B:
5 egg whites
1/2 tsp cream of tartar
1/2 cup caster sugar
Filling
1 tin mixed fruit cocktail(strained and reserve 60ml of juice)
1.5 tbsps gelatine
250g cream cheese
70g caster sugar
150ml UHT whipping cream(whipped)
Decoration
300ml fresh cream(whipped)
some fresh fruits
some grated cooking chocolate
Utensil needed
9"loose-base round cake tin
9"round cake tin
Method:
1)cake:line a 9"round cake tin.Preheat oven at 170 c
2)Hand whisk ingredient(A) in a bowl until well-combined.Leave aside.
3)Whisk egg whites and cream of tartar of ingredient(B) until foamy.Add in sugar and whisk until stiff.Combine with no(2).Pour into tin and bake for 40-45minutes.
4)Invert cake to cool before slicing into 3 layers horizontally.
5)Filling:Sprinkle gelatine into juice.Double-boil until gelatine has dissolved.
6)In a mixer,beat cheese and sugar until creamy.Fold in gelatine mixture of no (5),whipped cream and drained fruit cocktail.Divide into two portions.
7)To assemble:Place a layer of cake into9" loose-base cake tin.Top with one portion of filling.Repeat with second layer of cake and filling.Lastly, place third layer of cake on top of filling.Refrigerate until set before decorating.
8)To decorate:Spread whipped cream to cover the whole cake.Decorate with soem chocolate,grated chocolate and fresh fruits.Chill before serving.
